Smoked Chicken from Patchwork Times by Judy Laquidara

Smoked chicken is one of my favorite foods to cook and to eat. I love taking off the skin that we don’t eat and boiling it to make broth for cooking beans. I’ll put the broth in the fridge overnight so the fat rises to the top and hardens, then scrape it off and discard...

Chicken Was Delicious from Patchwork Times by Judy Laquidara

The chicken recipe Vince sent me was totally delicious, totally easy and can be made ahead and kept warm if serving for company. Changes I made: The only fresh herbs I had here was oregano so I used dried thyme and sage. 2 tsp. seemed like a lot of thyme and it isn’t one of...

Oven BBQ Chicken Recipe from Patchwork Times by Judy Laquidara

Every time I think about getting rid of things I no longer want or need, I am reminded of the joy of opening boxes and finding treasures. I don’t know when I started making Oven BBQ chicken but back in the late 70’s, there were only a few recipes I felt comfortable cooking and this...

Pardon me, has anyone seen my marbles? from From My Carolina Home

I was sure I still had them, but apparently I had lost them. They were certainly missing when I got a phone call from a dear friend in a bind. The person in charge of publicity for our guild’s Garden of Quilts show called my friend and quit a few minutes before my friend called me. That day was also the day before the committee meeting. She was desperate. As the show chair she needed someone to fill that job immediately. As she pleaded for help, how could I say no? I do have a bit of free time ...

Chicken Broth from Patchwork Times by Judy Laquidara

When I make Rita’s dog food, I cook chicken thighs, with the bone and with the skin, in the pressure cooker for about 40 minutes. It makes the best, richest broth! I don’t always use it but I do always save it. Sometimes after a few days, I’ll pour it into a plastic container and...

Dinner is Prepped from Patchwork Times by Judy Laquidara

There are two ways I like to cook: Have one day a week when I do most of the prep work so everything is in the fridge and ready to go. Cooking then takes very little time and clean up is much easier. I prefer to do this on the day before the trash truck...

40 Leaf Basil Chicken from Patchwork Times by Judy Laquidara

This is another recipe I found in one of the recent Southern Living magazines – 40 Basil Leaf Chicken. I haven’t tasted it yet so I can’t tell you how basil-y it will be. I can sit outside and eat basil leaves off the plant. Vince can take a bit of basil but he doesn’t...

Sewing lessons from Quilt in Progress

I have a 9-year-old granddaughter who loves to sew. She has received my hand-sewn gifts since she was born. A couple of years ago she wanted a sewing kit that included pieces to cut and sew by hand. The result was a small mermaid stuffie. Since then she would pick up needle, thread, and fabric, and sew creations by hand. On her 8th birthday her parents gave her a simple Brother sewing machine. That’s how it started.

I got a photo in a text soon after, showing a pillow she sewed and she was so proud of it! I ...

Lunch from Patchwork Times by Judy Laquidara

Yesterday, a I mentioned, it was after 2 before I remembered I needed to fix myself some lunch. I only eat breakfast and lunch and often it’s 2 before I eat but starting lunch after 2 meant it was about 3:30 before I ate. I had been wanting to make pho but couldn’t get bean...

40 Clove Chicken from Patchwork Times by Judy Laquidara

Don’t judge til you’ve tried it. Yes, there are 40 cloves of garlic in this dish. Chad loves garlic and I think he first started making this dish about 15 years ago. We sat down to eat and the first thing I said was “I love my gravy!” If I do say so myself, I...

Green Chicken Enchilada Casserole from Patchwork Times by Judy Laquidara

You may remember that as soon as I realized there might be a problem with this virus, I stocked up on enchilada sauce. Lots of enchilada sauce . . and I hardly felt like we needed much else. As I recall, I ordered two 28 oz. cans of green enchilada sauce for the Green Chicken...

Ginger Chicken with Yellow Squash from From My Carolina Home

While we are at home and I am cooking more, finding something new is key to keeping us from getting bored or tired of the same old dishes. I do enjoy cooking, and developing new recipes.  I had this idea of making a stir fry style dish with chicken and yellow summer squash as a fresh spring meal.  It took more than one attempt to get the sauce just right, with the right balance of flavors and the right texture to nicely coat the chicken and vegetables.  This has a wonderful umami and complex flavor, yet is simple and easy ...

Chicken Piccata from Patchwork Times by Judy Laquidara

I don’t really follow a recipe but I’m not good at following directions anyway so . . here’s how I make Chicken Piccata. First, I can’t stand thick chicken breasts so I take chicken breasts and slice them into halves or sometimes thirds lengthwise . . like if you stacked up my slices one on...
