White Pepper from Patchwork Times by Judy Laquidara

This is such a weird story. Some of you probably think all of my stories are weird.

Queen of Leftovers from Patchwork Times by Judy Laquidara

Every time I post about using leftovers, someone will tell me they don’t like leftovers or their husband doesn’t like leftovers. You may not believe this but I don’t like leftovers if it’s “just” leftovers. Take roast beef for example. I don’t like reheated roast beef as far as sliced or chunks over rice or...

Adventures in New Flavors from From My Carolina Home

I do enjoy cooking, and finding new combinations of meats and vegetables to keep My Sweet Babboo well fed. I am lucky in that he will eat just about anything put in front of him at the table, and likes vegetables. So when I received the latest cookbook from Milk Street, I knew we were in for some adventures in new flavors. The 365 in the title refers to the days in a year, and the cookbook contains over 600 recipes for just about every type of dish or meal you want.

Once again, I have loaded up the pages ...

A Quick Appliqued Apron from Quilt Doodle Doodles

Someday I hope to have some chickens, I want to be the crazy Ol lady with the hound dogs and chickens that loves to quilt. Sounds like a great retirement, doesn't it? I think it does. In the meantime, I need to be happy with visiting my sister and sister in laws chickens and live vicariously thru them. I can also make cute chicken projects.... today I wanted to show you a quick apron project. The big cheat is to run to Hobby Lobby and pick up an apron that doesn't have any design on it because you ...

Homemade Chicken “Nuggets” from Patchwork Times by Judy Laquidara

I love to watch Mandy in the Making on Youtube. A day or so ago, I watched this video and couldn’t wait to try the Easy Baked Chicken Nuggets and the Easy Chicken Caesar Wraps. The Chicken Wrap recipe is at the bottom of that linked page. Mandy used a Pesto Caesar Salad mix, which...

Grilled Chicken with Avocado Salsa from Patchwork Times by Judy Laquidara

This morning I planted 30 tomato plants, then planted a few flowers around the tomatoes . . flowers that are supposed to repel bad insects. By then the grass had dried up enough that I could take Oscar out and play fetch . . then Vince said “What’s for lunch?” I had planned to have...

Cookbooks, Recipes, and Chicken Salmoriglio from From My Carolina Home

I said last month that I’d talk about how my cooking has changed from my early days of meal preparing to how I cook now. When I was a new bride, my recipes consisted of mostly casseroles, with heavy reliance on canned soup for sauces. Vegetables were canned or frozen for the most part, and large portions of the plate went to pasta or potatoes. I baked bread most every week, heavy sourdough or whole wheat artisan loaves using a starter. The food guide was heavy on carbs, from my growing up years having four food groups with one ...

A Great Chicken Recipe from Patchwork Times by Judy Laquidara

This recipe is going on my list of “Serve When Company Comes”. The recipe is Creamy Herbed Chicken. So easy and so delicious. Of course, I made a few changes. I do not like thick chicken. This was three chicken breasts. They were small compared to the size of most chicken breasts. I cut those...

Canning Chicken from Patchwork Times by Judy Laquidara

Yesterday I had two large packages of chicken breasts to get canned. I decided to do an experiment with the various lids to see if any of those made a difference in the siphoning. For those who don’t know, siphoning is when liquid from the jars is “siphoned” out during the canning process. Most of...

Chicken with Eggplant Salsa from Patchwork Times by Judy Laquidara

Yesterday when I was canning all the eggplant salsa, I knew I was going to need a jar of it for today’s dinner but figured out of 33 jars, at least one would not seal so I canned them all and, of course, they all sealed and I had to open one today. Seems wasteful...

Bacon Wrapped Goat Cheese Chicken from From My Carolina Home

After I made the roast chicken and goat cheese dish that replicated a local Italian restaurant meal, I had some of the garlic and herb goat cheese left over. With some boneless, skinless chicken breasts in the freezer, it seemed a good time to pair them together for another meal. The boneless and skinless breast meat is not my favorite, as it dries out so fast, it is hard to get them fully cooked without being the proverbial rubber chicken. The answer, as it frequently is, was bacon.

Gathering what I had, I mixed up a spice blend for more ...

Rose Red Homestead – Chicken Recipes from Patchwork Times by Judy Laquidara

Through the years, I’ve watched hundreds of prepping type videos and shows so don’t ask me how I had never heard of Rose Red Homestead until this week but I’ve been binge watching her videos. There are some doom and gloom prepper type people out there, I’ve come across some videos that made me cringe....

Sunday Chat – Blogging, Cooking and Shopping from From My Carolina Home

Boy did my post on Thursday touch a nerve for a lot of us. With over 50 comments in just a few hours, it is clear that most of you love blogs still. Several commenters asked me not to stop blogging, and I want to assure you that I fully intend to keep blogging. I don’t like the Instagram thing, and was pretty much ranting about the demise of bloggers over the past couple of years. But have no fear, I will be continuing to write and post. I just want to find a way to easily read the ...

Japanese Style Chicken Meatballs from From My Carolina Home

With the price of food rising almost daily, I’ve been looking for new recipes to use less expensive cuts and ground meats. Ground chicken is still economical, but I didn’t have a good idea on how to use it. Then I got the Milk Street World in a Skillet book, and there was a great idea in one of my favorite cuisines. So, I made it, and it was fabulous. So good, in fact, that My Sweet Babboo declared it ‘quite tasty’, his highest award for food. You have to understand that for a chicken dish to get ...

Chicken Quesadillas from Patchwork Times by Judy Laquidara

Alfredo Chicken Corn Chowder from From My Carolina Home

Remember that half bottle of Alfredo sauce? I hope you saved it because it will get used up in today’s recipe. We are going to make a one-pot chicken chowder. The definition of a chowder means a soup with milk or cream. We’ll get the creaminess from the Alfredo sauce without adding more dairy.

So, time to assemble some ingredients and get started.

Here’s what you need –
1/4 cup chopped onion
1 teaspoon olive oil
1 garlic clove, minced
2 chicken thighs, no skin
1 can (15 oz) chicken broth, low sodium
1 can (15 oz ...

Chicken Pasta For Two from From My Carolina Home

In the pursuit of tasty recipes for two with little left over, I am often stymied by the size of a bottled sauce. The ones most available are made for four, not two. So the challenge is how to have two meals from the same bottled sauce and have them be different. My Sweet Babboo likes Alfredo sauce on pasta, and when I make this, I only make enough for us to have one meal, with maybe enough left over for a lunch the next day for him.

For this recipe, I’ll use two cups of this shell pasta ...

Roasting a Chicken from Patchwork Times by Judy Laquidara

A reader asked how I roast a chicken. This question took me by surprise. First, there are no dumb questions but roasted chicken is one of the first things I made as a young wife. I don’t even remember how I did it way back then but (1) chickens were very inexpensive back then and...
